Secondary Fermentation

1. The addition of sugar and yeast to a sparkling wine after bottling. After adding the sugar and yeast, the bottle is sealed, trapping the gas creating "bubbles".

2. A wine fault identified by tiny bubbles and a fizzing sound. Bubbles and fizz are typical in some wines, like Champagne or Prosecco.

Oxidized

The wine will have a brownish hue in red wine and an orange or brownish hue in white wine. It can smell of vinegar and taste flat and faded. (Think of soda that's lost its fizz).
